Coconut Banana Bread

Banana Bread
  • 4 ripe bananas, mashed
  • 1/4 c. coconut oil, melted
  • 1/2 c. honey
  • 2 eggs
  • 2 tsp. vanilla extract
  • 1 1/2 c. all-purpose flour
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. cinnamon, ground
  • 1 c. chocolate chips (whatever type you prefer, I used semi-sweet)
  • pinch of salt
  1. ​Preheat the oven to 350 F. Grease a 9x5 inch bread pan.
  2. In a large mixing bowl, stir together the mashed bananas, coconut oil, honey, eggs, and vanilla until combined.
  3. Add the flour, baking soda, cinnamon, and salt, mix until just combined. Add the chocolate chips and mix. 
  4. Pour the batter into the prepared bread pan. Bake for 50-60 minutes, or until center is set.
  5. Remove and let cool for at least 30 minutes with a dry towel.  Serve with butter or whatever you prefer.
